Thanksgiving Goodies

Thanksgiving time is almost here! Time to over indulge in food and drinks and fight falling into food comas so we can get ready for Black Friday shopping. If you've been chosen to bring a dish to the festivities and have no idea what to cook, we're here to help! We've gathered some of our all time favorite Thanksgiving dishes that are a sure fire crowd pleaser (and best of all, they're quick and easy to make!).

  1. Apple & Endive Salad

Ingredients: 1 lemon, zested and juiced. 3 tbsp EVOO (extra virgin olive oil). 1.5 tbsp minced shallots. 2 endives, thinly sliced. 2 apples, cored and thinly sliced. 2 ribs celery, thinly sliced, leaves reserved.

Recipe: In a large bowl, combine 1 tbsp. lemon zest and 2 tbsp. lemon juice. Whisk in EVOO and shallots. Toss with endives, apples celery, and celery leaves; season. Serves 4.

  2. Green Goddess Eggs

Ingredients: 12 hard boiled eggs, peeled and halved. 1/2 cup mayo. 1 tbsp Dijon mustard. 8 tbsp chopped fresh chives, parsley, and tarragon.

Recipe: In a bowl, mash egg yolks, mayo, mustard and 5 tbsp herbs. Finley chop 2 egg white halves; toss with remaining herbs. Spoon yolk mixture into halved whites; garnish with egg white-herb mixture. Makes 22.
  3.  Amaretto Pudding

Ingredients: 1/2 cup amaretto. 8 oz semisweet chocolate chips. 6 egg whites. 3/4 cups heavy cream, chilled.

Recipe: In saucepan, bring amaretto to a boil; transfer to a blender with chocolate and egg whites. Blend until frothy (about 3 minutes). Add 1/4 cup cream and blend until thick (30 seconds). Freeze in serving bowls, 30 minutes. Beat remaining cream until thick. Dollop onto puddings. Serves 8.
  4. Donut-Hole Acorns

Ingredients: 24 glazed donut holes/munchkins. 24 mini pretzel sticks. 1/2 bag chocolate chips, or opt for chocolate frosting. Toppings of choice; sprinkles, crushed cereal, chopped nuts.

Recipe: Melt chocolate, in 30 second increments until fully melted. Dunk a third of each donut hole into the melted chocolate and roll it in toppings of choice. Insert pretzel stick stems into the tops of the "acorns" and let them set on a sheet of parchment paper. Makes 24.
